Our whisky is batch made by hand with no computers, matured in fine casks, bottled on site using our own water and is non chill-filtered. We are really proud of these things and believe you will taste the difference too.
Why the Chapters? As a new distillery we wanted to offer our customers the opportunity to follow the production of a fine single malt whisky, peated and unpeated, from conception through to, well, indefinitely! For this reason we thought it would make easy reading to keep the development in chapters, so at various ages from 1 day old through to 40yr old we will give you the opportunity to taste how the whisky is maturing. Each new bottling will be a new chapter to the 'The Book'.
This is our peated whisky made by Iain Henderson. This is our first single malt whisky to be made available with a level of peatiness. Considered by all to be maturing beautifully. Bottled at 46% and non chill-filtered.
Very little smoke on the nose. Citrus, pine, spicy with paprika and pepper.
On the palate, tight smoke and only lightly medicinal. Spicy and very zingy. Almost rum and raison ice cream. Malty and floral. Nice balance with the smoke. Very gentle.
