Straffe Hendrik Wild is an abbey tripel refermented with wild yeast. Brewed by Bruges brewer Halve Maan Brewery, the brewers behind Brugse Zot and Straffe Hendrik. Halve Maan is the oldest brewery in Bruges, with a rich brewing history.
Straffe Hendrik Wild takes the Straffe Hendrik Tripel and referments the beer with wild ‘Brettanomyces’ yeast. This gives the beer a slightly sour flavour and adds fruity notes to this already rich, complex beer. Straffe Hendrik Wild pours a golden colour, with aromas of fruit and caramel malt. The flavours are similar, with a slight ‘funky’ flavour from the secondary wild fermentation. Straffe Hendrik Wild can be enjoyed fresh or aged in the bottle for a few years as the flavours continue to develop.

I am quite sure not everyone is a fan of Brett aromas/flavours but for me it certainly raises this beer high above the level of it’s orthodox Tripel original.

This masterpiece pours deep amber to golden, slightly cloudy with a rich, deep head. The aroma is quite malty, with a pronounced earthy funk that indicates immediately that this beer is a little ‘different’ – because its secondary fermentation is with Brettanomyces Bruxellensis. The taste is rich, deep and slightly sour with a background of both fruits and tannin, and the mouthfeel is like velvet. One of my top 5 beers of all time. I cannot wait to get back to Bruges again to drink this beer at the brewery.

A lively pour hazy orange so the head lasted Main aroma of Brett funk followed by floral spice with fresh green wine The taste is surprising red pepper tart blood oranges a zingy mouth blast. Maybe it will improve with ageing, to mellow the flavours and aromas but outstanding fresh after a year.
