Our whisky is batch made by hand with no computers, matured in fine casks, bottled on site using our own water and is non chill-filtered. We are really proud of these things and believe you will taste the difference too.
Why the Chapters? As a new distillery we wanted to offer our customers the opportunity to follow the production of a fine single malt whisky, peated and unpeated, from conception through to, well, indefinitely! For this reason we thought it would make easy reading to keep the development in chapters, so at various ages from 1 day old through to 40yr old we will give you the opportunity to taste how the whisky is maturing. Each new bottling will be a new chapter to the 'The Book'.
Chapter 6 is our unpeated whisky, made by Iain Henderson. This is our first single malt whisky to be available to the public. Matured solely in bourbon casks, we think this is a great reflection on the wonderful work done at the distillery and a real hint of things to come. Bottled at 46% and non chill-filtered.
Light and smooth on the nose, fresh and fragrant, sweet, soft and slightly spicy. Fresh cut grassy notes, along with gentle vanilla. Fruity with hints of lime, banana and pear. A gentle waft of marzipan. The nose softens with water and is quite nutty (hazelnuts, cashews, almonds).
Full-bodied, tingling and textured on the palate. Fresh wood, vanilla, again fruity and nutty, malty, cereal character comes through. Slightly citrus. Very clean.
