Drying the malt is now often in closed drums, but here and there let a fire is lit to dry the malt. Of course, the smoke gives this beer its characteristic taste. Emelisse Rauch Beer contains malt smoked over beech wood wet. This gives the beer its distinctive taste, but not as strong as with the Bavarian Rauch Beers.
