Grimbergen Brewery is situated in Grimbergen Abbey which was founded in 1128. This abbey has a history of being destroyed as it was just wasn’t burnt down once (1142) or twice (1566) but three times (1798). This burning and the rebuilding throughout the ages reminded the brewery of the legendary bird the phoenix which is why it is used as their symbol, as a sign of the abbeys rebuilt, they also took on a motto Ardet nec consumitur which stands for, Burned but not destroyed.
Their beer recipe has also lived through the abbey burnings. Their recipe makes their brews of the highest quality with their unique character and blend of aromas. Grimbergen beer is definitely something to try if you get the chance.
