Brazil’s national drink, cachaca (pronounced ‘cash-assa’), is a type of rum made from freshly crushed sugar cane. The resulting juice is distilled and then either bottled immediately or left to rest in tanks and/or wooden barrels. Whereas the young, clear cachacas are mainly used as an ingredient in cocktails, the older, darker and more complex cachacas are usually enjoyed neat, much like a malt whisky.
